Summer Squash


Hi All! I'm writing to ask for your help today. Yesterday a coworker gave me some summer squash and zucchini from their garden. I have lots of yummy zucchini recipes, but I'm not sure what to do with the summer squash. Have any yummy, tried and true recipes for me?

I don't have anything special. I'd just cube it and saute it and use it in an omelet or something like that. Good luck. I may peak by your comments to see if anyone is more creative than moi.

Hi Laura! I came over from Faith's blog. I think it might be good with some other veggies on the grill...but I also have this casserole recipe that is good. Enjoy!
6 Cups cubed squash (about 6 stalks)
1/2 sm. onion, chopped
8 oz. Sour Cream
1 can Cream of Chicken Soup
1 box stuffing mix
1/2 stick butter, melted.

1. Cut up the squash and boil in salted water for 5 minutes.
2. In a bowl, mix onion, sour cream, and soup. Drain squash and add to this.
3. Mix stuffing mix and butter in separate bowl. Place 1/2 of it in a greased 9x13 pan.
4. Cover with squash mixture and top with the rest of the stuffing mix.
5. Bake at 350 for 35-40 minutes!
